Born in the sultry streets of 16th-century Havana, the Mojito is the understated legend of the cocktail canon. Once a humble blend enjoyed by sailors and sugarcane workers, it rose to fame as the preferred refresher of silver-screen stars and wayfaring writers. Its crisp simplicity belies a history steeped in rebellion, rum-running, and the unmistakable charm of old-world Cuba.
Today, the Mojito stands as the quintessential ambassador of Cuban cocktail culture. A cooling rush of mint bursts forward like a sea breeze skimming over warm waters, while the sharp whisper of lime cuts with invigorating clarity. Beneath it all hums the soft sweetness of sugar and a clean, bright rum, a delicate balance that slips effortlessly between thirst-quenching and intoxicating.
Served tall over tinkling ice, this is the taste of Havana on a sun-drenched afternoon. You can almost feel the mosaic of shadows cast by swaying palms and hear the distant strum of a wandering guitarist. As the glass frosts over and the mint perfumes the air, the Mojito transports you to a world where time moves slowly, the heat dances gently, and every sip feels like a breeze off the Caribbean.
THE STORY
When creating a Mojito worthy of its Cuban roots, we began by seeking out a rum with a story as compelling as the cocktail itself. That search led us to a white rum that once reigned as Cuba’s favourite before the revolution. When the regime took hold, the family behind it was forced into exile in the Dominican Republic, and their recipe vanished into memory, until a descendant quietly resurrected it generations later. This restored, pre-revolutionary rum gave us the perfect foundation: bright, clean, and unmistakably Cuban.
Next came the sweetness. A true Mojito needs more than sugar, it needs that subtle funk of sugarcane that lifts the drink without weighing it down. Finding the right balance became an art form. We worked through version after version, tuning the sweetness until the cane’s natural character emerged just enough to give the cocktail a whole new dimension.
But the greatest challenge was mint. Capturing the taste of freshly crushed leaves is notoriously difficult, and it took us three years of experimentation to perfect an infusion delicate enough to mimic a bartender muddling mint right before your eyes. With all three elements finally in harmony, we arrived at our authentic Cuban Mojito, fresh, vibrant, and rooted in a history worth toasting.
