A Mai Tai is everything gorgeous about the Caribbean, exotic, fragrant, soaked in rum and filling your glass with golden sunshine.
Our new tiki sweetheart, we wanted to do the complexity of rum justice and so have blended four craft rums from regions including Panama, Martinique and Mauritius, giving it some sharp orange heat with a French orange Shrubb and them smoothing it out with a fragrant almond syrup. Held together with our signature tangy lime and some exotic fruit bitters, this is an incredible showcase of Tiki culture and rum at it’s very finest.
One sip and you’ll be dockside in Tortola at dusk, the harbour coming alive with music and exotic dancers amid the heady scent of sea, salt and aged wood.

One of the most enjoyable areas of cocktail mixing is when you get a chance to dive into Tiki culture. From Hawaiian wood bars, offensively graphic idol carvings, bright floral shirts and plenty of hibiscus flowers in your hair, it’s truly the essense of why we drink cocktails. To have a great time.
Nothing transports us faster to a coconut tree-lined beach, smelling the scents of banana, mango and lime on the breeze, than a good tiki cocktail. They really give you carte blanche to go sweet, spicy and bold all in one go, with colours as kaleidoscopic as a flock of rainforest parrots.
Aside from that, it’s an excuse to get creative with craft rums, something that always brings a smile to our faces. With so many terroirs and profiles, it’s hard to know where to begin. The Mai Tai, like many rum punch style drinks, allows you to showcase both light and dark rums. A light rum will typically contain the sweetness of sugarcane, with either a dry sharp profile, or much more funky in flavour when you head towards the agricoles, but still relatively clean in taste. Dark rums however, are aged in wood barrels to really enhance the rich, earthy flavours such as molasses and caramel, often bringing in notes of coffee, oak, vanilla and spice. Given their rich flavours, they are normally sipped straight to appreciate the complexity.
We wanted a pretty funky Mai Tai, so started with a great agricole from Martinique for that rich, fermented sugarcane aroma and taste. Next was a fantastic historic rum, the same blend which was drank by sailors for 300 years in the British navy as they toured around the Caribbean. Their daily tot ration was the highlight of their day, celebrated with the cry ‘Up Spirits’, taken around midday just before the heat of the day set in. To this, we added a deliciously rich 7 year rum and a Mauritian gold to complete the flavour profile, so you will have something exciting happening in each stage of your mouth as it slips down.
Of course it wouldn’t be a Mai Tai without a gorgeously floral almond kick, a tangy slice of lime and a hint of fresh garden mint to really make you feel like you’re sitting on a beach at the Four Seasons in Maui. So break out the floral shirt and the flamingo coasters, and get ready for a trip to Tiki town!
