    Caribbean Sunset Banana Rum Old Fashioned

    In chasing the perfect Banana Rum Old Fashioned, we naturally headed to the Caribbean for inspiration. In our mind's eye, we were already watching the golden sunset dappling the warm salty water beneath the coconut palms, the ivory sand slipping between our toes, still warm from the tropical heat of the day.

    To craft the complex layers this cocktail demands, we started with a spiced rum to give a smooth and mellow base, before injecting an overproof banana rum for an intense Caribbean explosion. Finally, we added a subtle sweetness with rich demerara sugar, and a lovely bitter end note from rum infused with discarded banana peel.

    This cocktail is a true taste of island paradise, and one you can really escape the everyday with. From the first sip you’ll be lying beneath the coconut trees on a deserted beach, the distant sound of parrots serenading the evening to come.

    THE STORY

    There are more ways to drink an old-fashioned than there are pages to write the recipes down, but one twist that has endured timelessly for years, is the rum old fashioned. Being a complex, dark spirit with huge variation in character, rum naturally lends itself well to this classic, signature cocktail.

    To give it a Tom Savano travel twist, we immediately thought of our early years drinking Langs banana rum from Jamaica. Those golden memories were iconic enough to really evoke the lush paradise of the Caribbean we dreamed of one day visiting, but now we're a little older, we wanted to do it with a little more refinement.

    Being a combination as obligatory as salt and pepper, we found no shortage of banana-styled rum's on the market. After many a tasting, we were left with the three which layered everything we wanted in an old-fashioned: Smoothness, intensity, and character. So climb aboard the banana boat, because the next stop, is the lush, sun-drenched sands of the Caribbean.

    SERVE THE PERFECT Banana Rum Old Fashioned

    CHOOSE THE RIGHT GLASS
    An Old Fashioned should always be served in a rocks tumbler, ideally the same width at the neck as the base. You want the delicious aromas of rum to swirl and fill your nose, while the glass fits neatly in your hand. The glass should also be wide enough to fit a large ice block. Go for some vintage, crystal patterns to add some weight to the feel in your hand.

    PREPARE WITH ICE
    You don't want to dilute this cocktail, as the appeal is in it's strength. Neither should you ever shake this cocktail over ice, as you will ruin the subtle layers of the drink with broken ice shards. Simply place a large ice block or sphere in the middle of your glass, and pour the liquid (well chilled) over the ice block. If you don't have any large ice, just one or two regular ice cubes will suffice as you don't want to water the cocktail down too much.

    MAKE THE PERFECT GARNISH
    You want your garnish to evoke a perfect sunset on a Caribbean beach, so take a banana and slice 1cm thick, placing it on a skewer across the glass. For extra points, try and caramelise your banana with a blow torch, geting a lovely burned caramel flavour to blend with it. For something different, try the above with a piece of pineapple, again with the skin still on.
